Breakfast recipes built for a real morning: things you can make in twenty minutes, things you can prepare the night before, and things worth the extra half-hour on a weekend. Muffins, baked oats, egg dishes, breakfast casseroles, quick breads and the make-ahead options that survive three days in the fridge.
Make-ahead, and what it costs
Most of these recipes can be made in advance, but not all of them keep the same way.
Muffins and quick breads keep three days at room temperature in a closed tin, and freeze well for a month. Reheat from frozen at 160 °C for eight minutes.
Baked oats and casseroles can be assembled the night before and baked in the morning. Add five minutes to the bake time if the dish goes in cold.
Egg dishes are the exception — they are best cooked to order. Prepare the fillings ahead, not the eggs.
Where a recipe can be halved or doubled without trouble, the card says so.
Breakfast leads naturally into the rest of the day. If you are baking anyway, the Donuts recipes use the same dough and frying skills on a sweeter scale. For dinner at the other end of the day, Beef Stew gathers the braises and one-pot meals that reward a long cook. Anything outside those three, from sides to desserts, is filed under Other.
