Shape the loaves

Turn the dough onto a floured surface and knead 1 minute to deflate. Split in half, roll each into a rectangle, fold into thirds like a letter, and press seams. Place seam-side down in greased loaf pans.

Second rise

Cover loosely and let rise for 30 minutes. The dough should dome just above the pan rim, overproofing makes it collapse during baking, so stop when it’s about 1 inch above the rim.

Bake

  • 2 cups warm milk about 110-115°F (45°C)
  • 1-1/2 Tbsp instant yeast
  • 1 tsp sugar
  • 1/2 cup warm water
  • 2-1/2 cups whole wheat flour
  • 3 to 3-1/2 cups bread flour or all-purpose flour start with 3 and add more as needed
  • 3 Tbsp shortening butter flavored recommended
  • 1/4 cup honey
  • 1 Tbsp salt
  • 1 egg for egg wash
  • 1 Tbsp water for egg wash

Instructions
 

  • Activate yeast mixture:

    In a stand mixer bowl, stir together warm milk (110-115°F (45°C)), yeast, and sugar. Allow to rest for 5 minutes until foamy.
  • Knead dough:

    Add warm water, whole wheat flour, 3 cups bread flour, shortening, honey, and salt. Using the dough hook on low speed, knead for 2 minutes, scraping the bowl as needed. Gradually incorporate up to 1/2 cup additional bread flour until the dough is soft and tacky but not sticky. Knead for another 2 minutes.
  • First rise:

    Form the dough into a ball within the bowl, cover with plastic wrap and a clean towel. Let it rise in a warm spot for 1 hour until doubled in volume. (Optional: heat oven to its lowest setting for 1 minute, turn off, then place the bowl inside.)
  • Divide dough:

    Transfer the dough to a lightly floured surface and knead for 1 minute. Split into 2 equal pieces.
  • Shape loaves:

    Roll each piece into a rectangle, then fold into thirds like a letter, pressing the seams with the heel of your hand. Tuck the ends underneath and position seam-side down in two greased 9×5-inch loaf pans.
  • Second rise:

Swap honey for maple syrup, but measure by feel

Honey: Maple syrup or agave nectar. Use the same 1/4 cup. Maple syrup is slightly thinner, so you may need to add a tablespoon extra flour during kneading if the dough feels too soft.
