Slow Cooker Guinness Beef Stew

Beef stew meat is browned and slow-cooked with Guinness, vegetables, and herbs for a rich, tender meal.

Ingredients
  

  • 2 pounds beef stew meat trimmed and cubed into 2-3 inch pieces
  • 1/4 cup all-purpose flour 30g
  • 2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 2 cups beef broth
  • 1 medium onion peeled and diced
  • 1 small onion quartered
  • 5 garlic cloves minced
  • 4 whole garlic cloves
  • 2 tablespoons Worcestershire sauce
  • 3 cups Guinness beer
  • 3 bay leaves
  • 1 bunch fresh rosemary
  • 3 medium carrots peeled and sliced into 1/4-inch rounds
  • 1 cup celery diced
  • 1 pound mini red potatoes peeled and halved
  • Fresh parsley for garnish

Method
 

  1. Season and flour beef:

    Season the beef cubes with salt and pepper, then coat with 1/4 cup flour (30g).
  2. Brown beef in batches:

    Heat oil in a skillet over medium heat. Working in batches, brown the meat until golden on all sides. Set aside.
  3. Deglaze skillet with broth:

    Pour a small amount of broth into the skillet and scrape up any browned bits. Reserve this deglazed liquid.
  4. Sauté onion and garlic:

    Melt butter in the same skillet. Sauté the diced onion and minced garlic until softened.
  5. Cook in slow cooker:

    Transfer all ingredients to a slow cooker: browned beef, deglazed liquid, sautéed onion and garlic, quartered onion, whole garlic cloves, Worcestershire sauce, Guinness, bay leaves, rosemary, carrots, celery, and potatoes. Cover and cook on HIGH for 4 hours or LOW for 8 hours, until beef is fork-tender.
  6. Garnish with parsley:

    Sprinkle with fresh parsley and serve hot.
