Ingredients
  

  • 2 lbs beef stew meat
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 medium potatoes peeled and diced
  • 2 carrots sliced
  • 1 large onion diced
  • 1 can diced tomatoes 14 oz
  • 3 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 3 cloves garlic minced
  • 4 cups beef broth
  • Other vegetables optional

Method
 

  1. Sear the beef:

    Season the beef with salt and pepper. In a skillet over medium-high heat, warm the olive oil and sear the beef in batches until browned. Move the meat to the crockpot.
  2. Layer vegetables:

    Place the diced potatoes, sliced carrots, and diced onion on top of the beef in the slow cooker.
  3. Mix tomato sauce:

    In a separate bowl, mix together the diced tomatoes, tomato paste, oregano, paprika, and minced garlic. Pour this mixture over the beef and vegetables.
  4. Add beef broth:

    Add the beef broth to the crockpot, making sure all ingredients are fully covered.
  5. Slow cook:

    Put the lid on and cook on low heat for 7 to 8 hours.
  6. Season and serve:

    Give it a stir, taste and adjust salt and pepper as needed. Serve hot alongside rice or bread.
