  • 1 cup whole milk ricotta
  • 1 to 2 teaspoons honey
  • zest of ½ lemon
  • 1 pinch flaky salt
  • 1 teaspoon olive oil
  • Extra honey for drizzling
  • More lemon zest for garnish
  • Cracked black pepper for garnish
  • Chopped pistachios for garnish
  • Fresh thyme for garnish
  • Red pepper flakes for garnish
  • Toasted baguette slices for serving

Method
 

  1. In a medium bowl, mix together 1 cup whole milk ricotta, 1 to 2 teaspoons honey, the zest of ½ lemon, and 1 pinch flaky salt. Stir until just combined.
  2. Beat the mixture with a hand mixer on medium or by whisking vigorously for 60 to 90 seconds, pausing once to scrape down the sides, until the dip becomes airy and smooth.
  3. Transfer the whipped ricotta to a shallow serving dish. Create a gentle swirl on top using the back of a spoon.
  4. Top with 1 teaspoon olive oil. Garnish as desired: extra honey, more lemon zest, cracked black pepper, chopped pistachios, fresh thyme, or red pepper flakes.
  5. Serve right away alongside toasted baguette slices.
