Ingredients
  

  • 4 bone-in pork chops, each 1 inch thick
  • 4 garlic cloves, minced fresh
  • 1/4 cup chopped fresh parsley (cilantro works as a substitute)
  • 2 teaspoons fresh rosemary (dried may be used if needed)
  • 2 teaspoons fresh oregano (dried is also acceptable)
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice, freshly squeezed
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt or sea salt
  • 1/2 teaspoon black pepper, freshly ground
  • 2 lemon slices (optional)
  • 2 tablespoons fresh herbs (additional parsley or rosemary for garnish)

Instructions
 

  • Mix marinade ingredients:

    Mix together in a medium bowl the minced garlic, parsley, rosemary, oregano, lemon zest, lemon juice, olive oil, salt, and pepper until thoroughly combined.
  • Marinate pork chops:

    Put the pork chops into a resealable bag or a dish; pour the marinade over them, coating each chop completely. Seal and chill for a minimum of 1 hour, preferably 3-4 hours.
  • Preheat grill or skillet:

    Preheat a grill or skillet over medium-high heat.
  • Grill pork chops:

    Take the chops out of the marinade, allowing excess to drip away. Cook on the grill for 4-5 minutes per side, until the internal temperature hits 145°F (65°C).
  • Rest and garnish:

    Let the pork chops rest for 5 minutes before serving. Top with optional lemon slices and fresh herbs.
