Ingredients
  

  • 1/2 cup quinoa, uncooked
  • 2 cups spinach, finely chopped
  • 1 tomato, diced
  • 1/2 cup cucumbers, diced
  • 1/4 cup raisins
  • 1 1/2 tablespoon lemon juice
  • 1 1/2 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Cook Quinoa:

    Wash the quinoa using a fine-mesh sieve. In a medium pot, heat 2 cups of salted water until boiling. Stir in the quinoa, lower the heat, and let it cook gently for roughly 10 minutes until soft. Strain off the water and allow to cool.
  • Make Dressing:

    In a small bowl, combine lemon juice, olive oil, salt, and pepper, then whisk thoroughly to create the dressing.
  • Combine Salad:

    In a large mixing bowl, put the cooled quinoa, spinach, diced tomatoes, cucumbers, and raisins. Add the dressing and mix well. Adjust seasoning with extra salt and pepper if desired.
