Ingredients
  

  • 3 cups cooked quinoa
  • 3 avocados, chopped
  • ½ cup red onion, chopped
  • cup red bell pepper, chopped
  • ½ cup cilantro, chopped
  • Salt to taste
  • ¼ cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • ½ teaspoon chili powder
  • teaspoon garlic powder
  • ¼ teaspoon salt

Instructions
 

  • Mix quinoa and veggies:

    In a large bowl, mix quinoa, avocados, red onion, red bell pepper, and cilantro; put aside.
  • Whisk and fold dressing:

    In a smaller bowl, whisk Greek yogurt, lime juice, honey, chili powder, garlic powder, and salt. Add dressing to the quinoa mixture and fold gently, taking care not to crush the avocados. Adjust salt as needed.
  • Serve warm or chilled:

    Serve the quinoa salad warm or chill for up to 1 hour.
