Coat a donut pan(s) thoroughly with baking spray or grease with oil. Set the pan(s) on a baking sheet and reserve.Whisk dry ingredients:
In a bowl, combine flour, baking powder, baking soda, salt, and pumpkin pie spice using a whisk. Set aside.Mix wet ingredients:
In another bowl, whisk oil, brown sugar, granulated sugar, eggs, sour cream, and vanilla until uniform.Fold in pumpkin:
Using a silicone spatula, fold in the pumpkin puree.Combine wet and dry:
Add the dry mixture and gently fold with the spatula until just incorporated.Pipe batter into pans:
Fill a large piping bag with the batter and cut off the tip. Pipe batter into each donut cavity, filling each about two-thirds full.Bake donuts:
Position the pan(s) in the oven center and bake for 12 minutes, or until a toothpick inserted in a donut comes out clean.Cool in pan:
Allow to cool in the pan for several minutes. Once cool enough, remove donuts and place on a wire rack to cool fully.
