Ingredients
  

  • 2 cups all-purpose flour 250 g
  • 1 cup granulated sugar 200 g
  • 1/2 cup brown sugar 100 g
  • 1/2 cup unsalted butter 113 g, melted
  • 2 large eggs
  • 1 cup milk 240 ml
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh peaches diced
  • 1/2 teaspoon salt

Method
 

  1. Preheat Oven and Prep Pan:

    Set the oven to 350°F (175°C). Coat a muffin tin with grease or insert paper liners.
  2. Whisk Dry Ingredients Together:

    In a big bowl, combine the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon with a whisk.
  3. Mix Wet Ingredients:

    In a separate bowl, mix the melted butter, eggs, milk, and vanilla extract using a whisk.
  4. Combine Wet and Dry Mixtures:

    Add the wet blend to the dry one and fold with a spatula until barely combined.
  5. Fold in Diced Peaches:

    Incorporate the diced peaches by folding them gently into the batter.
  6. Fill Muffin Cups:

    Portion the batter into the muffin cups, filling each to roughly two-thirds full.
  7. Bake Until Golden:

    Bake for 18-20 minutes until the tops turn golden and a toothpick inserted in the center emerges clean.
  8. Cool Muffins in Pan:

    Let the muffins sit in the pan for 5 minutes, then move them to a wire rack to cool fully.
