Mexican Pork Chops

Ingredients
  

  • lb boneless pork chops
  • tbsp olive oil (or avocado oil)
  • tbsp taco seasoning
  • 1 tbsp minced cilantro (or flat leaf parsley)
  • 3 tbsp lime juice (about 2 limes)
  • 1 tsp olive oil (or avocado oil, for greasing the skillet)

Instructions
 

  • Make marinade:

    Combine 2½ tbsp oil, taco seasoning, cilantro, and lime juice in a small bowl; whisk until uniform.
  • Marinate pork chops:

    Put the pork chops in a shallow glass or ceramic dish or a zip-top bag. Pour the marinade over them, flipping with tongs to ensure even coating. Cover or seal and refrigerate for 2 to 18 hours. Tip: For improved searing, remove chops from the fridge 30-45 minutes before cooking to let them come to room temperature.
  • Heat skillet:

    When ready to cook, warm 1 tsp oil in a large skillet over medium-high heat. Using tongs, lift pork from marinade, allowing excess to drip off; discard leftover marinade.
  • Sear pork chops:

    Place pork chops in the hot oil and sear for 3-4 minutes per side.
  • Finish cooking:

    Cover the skillet, lower heat to low, and continue cooking for 5-6 minutes until the internal temperature hits at least 145°F (65°C).
