- 2 bone-in pork chops, 3/4 to 1 inch thick
- 2 tablespoons vegetable oil
- 2 teaspoons brown sugar
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1 cup chicken broth
- 1 tablespoon Liquid Smoke
Season Pork Chops:
Combine brown sugar, salt, and pepper in a small bowl. Coat both sides of each pork chop evenly with the mixture.Sear Pork Chops:
Turn the Instant Pot to sauté mode and pour in the vegetable oil. Once the oil is shimmering, sear the pork chops for roughly 2 minutes per side until browned. Transfer the chops to a plate and hit Cancel.Pressure Cook Pork Chops:
Pour chicken broth and Liquid Smoke into the pot. Use a wooden spoon to scrape up any browned bits from the bottom. Submerge the pork chops in the liquid. Lock the lid and set to pressure cook for 10 minutes. Let the pressure release naturally for at least 10 minutes before taking out the chops. Serve immediately.
