Guava Coquito with Coconut and Rum

Make-ahead guava coquito with cream of coconut, evaporated milk, guava marmalade, cinnamon and aged rum. Chills in 2 hours and serves 8 as a creamy holiday drink.

Ingredients
  

  • 1 can cream of coconut 15 fl oz; such as Coco Lopez
  • 1 can evaporated milk 12 fl oz
  • 1 can full-fat coconut milk 13.5 fl oz
  • 1 1/2 cups guava marmalade
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tbsp vanilla extract
  • 2 cups Puerto Rican aged rum such as Don Q
  • Shredded coconut for garnish
  • Guava marmalade for garnish

Method
 

  1. In a large blender, place cream of coconut, evaporated milk, coconut milk, guava marmalade, cinnamon, nutmeg, salt, vanilla extract, and rum.
  2. Blend on low speed for 2 to 3 minutes.
  3. Move the guava coquito into a glass container for storage.
  4. Chill in the refrigerator for at least 2 hours; a longer rest overnight gives superior taste.
  5. Shake the container thoroughly prior to pouring.
  6. For serving, decorate the glass with guava marmalade and shredded coconut.
