Green Beans Almondine with Garlic Butter

Ingredients
  

  • 1 pound green beans ends snapped off and cut into 1-inch pieces
  • 3/4 teaspoon kosher salt split into two portions
  • 2 tablespoons unsalted butter
  • 1/4 cup slivered almonds
  • 2 garlic cloves finely chopped

Method
 

  1. Prepare an ice bath by filling a large bowl with ice and water; reserve.
  2. Heat a large pot of water until boiling. Stir in 1/2 teaspoon of the kosher salt. Drop in the green beans and boil for 3 minutes. Using a mesh strainer, lift out the beans promptly and plunge them into the ice bath for 1 minute. Drain thoroughly and blot dry.
  3. In a large skillet, heat the butter over medium heat until melted. Add the almonds and garlic; sauté for 2 minutes until the almonds turn golden.
  4. Put the green beans into the skillet. Sprinkle with the remaining 1/4 teaspoon kosher salt. Toss everything together and cook until the beans are tender, roughly 2 minutes. Sample and adjust seasoning with extra salt if needed.
