Chicken Skewers
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki
  • 1/2 cup cucumber finely grated and drained
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill chopped
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • Pinch of salt

Chicken Skewers
  1. Marinate the Chicken:

    Combine 1/4 cup lemon juice, 1/4 cup olive oil, 4 minced garlic cloves, 2 teaspoons dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper in a bowl. Thoroughly coat the chicken breasts, cover, and allow to marinate for at least 30 minutes.
  2. Make Tzatziki Sauce:

    Grate the cucumber finely, press out excess moisture, then mix with Greek yogurt, 2 tablespoons chopped fresh dill, 1 minced garlic clove, 1 tablespoon lemon juice, and a pinch of salt. Refrigerate while the chicken cooks.

  1. Grill Chicken Skewers:

    Slice the marinated chicken into bite-sized cubes and thread onto skewers. Grill over medium heat for 10–12 minutes, turning every so often, until browned and fully cooked.
  2. Serve with Tzatziki:

    Serve the chicken skewers with a generous spoonful of tzatziki. Garnish with additional dill or a lemon wedge if desired.
