Funfetti Greek Yogurt Muffins

Moist and fluffy funfetti Greek yogurt muffins made with simple ingredients. Easy 15-minute bake for a colorful snack.

Ingredients
  

  • 2 cups all-purpose flour 250 g
  • ¾ cup white sugar 150 g
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup butter 57 g
  • ¼ cup olive oil or avocado oil 60 ml
  • 1 cup plain Greek yogurt 245 g
  • ½ cup milk 120 ml (whole, 2% or 1%)
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup traditional rainbow sprinkles 80 g

Method
 

  1. Preheat Oven and Prep Pan:

    Heat oven to 375°F (190°C). Prepare muffin tins with paper liners or coat with cooking spray.
  2. Whisk Dry Ingredients:

    Combine flour, sugar, baking soda, and salt in a large bowl using a whisk. Reserve.
  3. Soften Butter in Microwave:

    In a medium microwave-safe bowl, heat butter for 20-25 seconds until softened and largely melted.
  4. Mix Wet Ingredients:

    To the melted butter, add oil, Greek yogurt, milk, egg, and vanilla. Whisk until smooth, avoiding overmixing.
  5. Combine Wet and Dry:

    Add wet mixture to dry ingredients. Fold with a spatula or large spoon until just combined. Gently incorporate sprinkles.
  6. Fill Muffin Cups:

    Spoon batter into muffin cups, filling nearly to the top. Optionally add extra sprinkles on top.
  7. Bake Muffins:

    Bake at 375°F (190°C) for 15-17 minutes, until a toothpick inserted in the middle comes out clean. (My muffins are done at 15 minutes, but oven performance may differ.)
  8. Cool in Pan Then Rack:

    Allow muffins to rest in the pan for 5-10 minutes, then transfer to a rack. Serve warm or cool fully before storing. (Hint: Liners peel off more easily when completely cool.)
