Creamy Cajun Chicken & Rice

Ingredients
  

  • 2 tablespoons olive oil
  • 2 chicken breasts diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons Cajun seasoning
  • 1 cup long-grain rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions
 

  • Warm olive oil:

    In a large skillet, warm olive oil over medium heat.
  • Sear diced chicken:

    Add diced chicken and sear until golden, roughly 5-7 minutes.
  • Sauté onion and garlic:

    Mix in chopped onion and minced garlic; sauté for 3-4 minutes until tender.
  • Add Cajun seasoning:

    Evenly dust the mixture with Cajun seasoning and stir thoroughly.
  • Combine rice and broth:

    Add rice and chicken broth, then gently combine.
  • Simmer covered rice:

    Increase heat to high until boiling, then lower to a simmer, cover, and cook for 15-20 minutes.
  • Stir in heavy cream:

    Pour in heavy cream, and season with salt and pepper as desired.
  • Garnish with parsley:

    Top with fresh chopped parsley before serving.
