- 2 tablespoons olive oil
- 2 chicken breasts diced
- 1 onion chopped
- 2 cloves garlic minced
- 2 tablespoons Cajun seasoning
- 1 cup long-grain rice
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish
Warm olive oil:
In a large skillet, warm olive oil over medium heat.Sear diced chicken:
Add diced chicken and sear until golden, roughly 5-7 minutes.Sauté onion and garlic:
Mix in chopped onion and minced garlic; sauté for 3-4 minutes until tender.Add Cajun seasoning:
Evenly dust the mixture with Cajun seasoning and stir thoroughly.Combine rice and broth:
Add rice and chicken broth, then gently combine.Simmer covered rice:
Increase heat to high until boiling, then lower to a simmer, cover, and cook for 15-20 minutes.Stir in heavy cream:
Pour in heavy cream, and season with salt and pepper as desired.Garnish with parsley:
Top with fresh chopped parsley before serving.
