  • 1 cup dried cranberries 120 g
  • 3/4 cup orange juice 180 ml
  • 2 cups all-purpose flour 240 g
  • 3/4 cup granulated sugar 150 g
  • 1 teaspoon baking powder 4 g
  • 1/2 teaspoon baking soda 3 g
  • 1/2 teaspoon salt 3 g
  • 1 large egg
  • 1/3 cup vegetable oil 80 ml
  • 1 orange zested

Method
 

  1. Set oven temperature to 375°F (190°C).
  2. Let the dried cranberries steep in the orange juice for 10 minutes.
  3. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt by whisking.
  4. Introduce the egg, vegetable oil, orange zest, and the steeped cranberries along with their orange juice; whisk until the mixture is uniform.
  5. With an ice cream scoop, portion the batter into muffin liners, filling each 3/4 full.
  6. Bake for 18–20 minutes.
