Ingredients
  

  • 1/4 cup olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 2 cups cooked cooled quinoa
  • 1 cup canned lentils rinsed and drained
  • 1 red pepper seeded and diced
  • 1 small tomato seeded and diced
  • 1 medium cucumber diced
  • 1 cup kale finely chopped
  • 2-3 tablespoons freshly chopped cilantro

Instructions
 

  • Whisk dressing:

    In a large bowl, whisk together olive oil, white wine vinegar, lemon juice, and sugar until emulsified. Season with salt and pepper to taste.
  • Combine salad ingredients:

    Add quinoa, lentils, red pepper, tomato, cucumber, kale, and cilantro to the bowl. Toss to mix well. Adjust seasoning with salt and pepper if needed.
  • Serve or chill:

    Serve at room temperature or refrigerate until ready to serve.
