Coconut Flour Bread

Blend coconut flour, flax, and eggs into a quick bread batter, then bake until golden for a moist, sliceable loaf.

Ingredients
  

  • 1/2 cup coconut flour 56g
  • 1/3 cup ground flax (flax meal) 40g
  • 1/4 cup arrowroot powder/tapioca flour 30g, optional
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 4 large eggs
  • 1/2 cup flavorless oil (like avocado oil or melted refined coconut oil) 120ml
  • 1/3 cup dairy-free milk (unsweetened almond milk, coconut, etc.) 80ml
  • 2 tablespoons honey 30ml, optional
  • sesame seeds (or other seeds of choice - like sunflower seeds, chia, flax, etc.)
  • ground flax

Instructions
 

  • Preheat Oven and Prep Pan:

    Set oven to 375°F (190°C). Coat an 8x4-inch loaf pan with oil or fit with parchment paper.
  • Blend Wet and Dry Ingredients:

    In a blender, add wet components first, then all other ingredients. Pulse or blend at low speed until smooth.
  • Mix Batter by Hand (Optional):

    If you skip the blender, in a large bowl whisk together eggs, oil, milk, and optional honey. Then mix in coconut flour, ground flax, arrowroot powder, baking powder, and salt until no dry bits remain.
  • Fold in Whipped Egg Whites:

    For a fluffier texture, optionally separate eggs, whip whites to stiff peaks, make batter with yolks only, then gently fold in the whites.
  • Transfer Batter and Add Toppings:

    Transfer batter to the greased pan. Top with sesame seeds and a dusting of ground flax.
  • Bake Until Toothpick Clean:

    Bake for 25-30 minutes; a toothpick inserted in the center should emerge clean.
  • Cool in Pan Then on Rack:

    Let cool in the pan for 10 minutes, then move to a wire rack to finish cooling.
  • Refrigerate and Toast Before Serving:

    Keep refrigerated up to 1 week. Toasting slices lightly is strongly advised.
