Prepare the bacon by baking it in an oven preheated to 400°F (205°C) until crispy, which typically takes 15-20 minutes, or use your preferred method. Once done, place on paper towels to drain, let cool, and then cut into bite-sized chunks.
In a large bowl, combine 1 1/4 cups of Miracle Whip or mayonnaise with the zest of one lemon, 1 tablespoon of lemon juice, 2 tablespoons of white wine vinegar, 1/4 cup of sugar, 1 1/4 teaspoons of kosher salt, 1/2 teaspoon of black pepper, 1/4 teaspoon of dry mustard, and 1/8 teaspoon of cayenne pepper, whisking until smooth. The cayenne provides flavor without adding heat.
Using a chef's knife, slice the broccoli into very small florets. Additionally, peel the stems and dice them finely, incorporating them into the salad if you like.
