Ingredients
  

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 1 small yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1.5 cups orzo pasta, uncooked
  • 4 cups low-sodium chicken broth
  • 5.2 oz Boursin cheese (Garlic & Fine Herbs flavor), softened
  • 3 cups fresh spinach, packed
  • 2 tbsp fresh parsley, chopped for garnish, optional

Instructions
 

  • Cook seasoned chicken:

    Season the chicken cubes with salt and pepper. In a large skillet over medium-high heat, warm the olive oil and butter. Add the chicken and cook for 5-7 minutes until golden and fully cooked. Transfer the chicken to a plate and set aside.
  • Sauté onion and orzo:

    In the same skillet, sauté the diced onion until softened, about 3-4 minutes. Add the minced garlic and dry orzo; stir constantly for 1 minute until the orzo is lightly toasted and aromatic.
  • Simmer orzo in broth:

    Pour in the chicken broth, deglazing the pan by scraping up any browned bits. Bring to a simmer, then lower the heat, cover, and cook for 10-12 minutes until the orzo is al dente and most liquid is absorbed.
  • Stir in Boursin cheese:

    Remove from heat. Add the softened Boursin cheese wheel to the skillet. Stir gently until fully melted and a creamy sauce coats the orzo.
  • Combine chicken and spinach:

    Return the cooked chicken to the skillet. Add the fresh spinach and stir until just wilted. Serve at once, topped with chopped parsley if desired.
