Citrus Honey Dressing
- 1 teaspoon orange zest
- 4 tablespoons fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 1 teaspoon finely chopped mint
- 1 teaspoon finely chopped basil
Berry Quinoa Salad
- 2 cups cooked quinoa
- 1 1/2 cups strawberries cut in half
- 1 cup raspberries
- 1 cup blackberries
- 1 cup blueberries
- 1 cup roughly chopped almonds (or candied pecans)
- 1 tablespoon finely chopped mint
- 1 tablespoon finely chopped basil

Whisk Citrus Dressing:
Prepare the dressing: Combine orange zest, orange juice, lemon juice, lime juice, honey, mint, and basil in a small bowl or jar. Whisk until well blended, then set aside.
