Ingredients

  • 1 tube crescent dough or 2 sheets puff pastry, semi-thawed
  • cooking oil spray for pan
  • all-purpose flour for work surface
  • 1 wheel brie 8 oz / 250 g, full wheel
  • 6 tsp whole berry cranberry sauce or cranberry jelly/jam
  • 6 tsp diced bacon cooked (or bacon bits)
  • 6 pecan halves
  • 1–2 tbsp maple syrup
  • 6 tsp apricot preserves or jam
  • 6 tsp walnuts crushed
  • 8 tsp butter melted
  • 1 clove garlic crushed or minced
  • 1 sprig rosemary leaves torn off stem
  • salt to taste
  • cracked pepper to season

Method

  1. Turn oven on to 375°F (190°C). Coat a mini muffin tin lightly with cooking spray.
  2. Get the dough ready: for crescent dough, unroll on a surface dusted with flour and press the seams closed. For puff pastry, unroll straight onto its parchment paper to avoid sticking. Slice the dough into 24 equal squares, then press each square gently into the mini muffin tin cups.
  3. Slice brie into 24 small pieces and put one in each dough cup.
  4. CRANBERRY: Add a spoonful of cranberry sauce to 6 cups. Sprinkle with salt and pepper.
  5. MAPLE BACON: In another 6 cups, add a spoonful of cooked diced bacon, 2 pecan halves, and a drizzle of maple syrup. Sprinkle with pepper.
  6. APRICOT WALNUT: In 6 cups, add a spoonful of preserves and crushed walnuts. Sprinkle with a pinch of salt.
  7. GARLIC BUTTER HERB: Combine butter and garlic. Top the remaining 6 cups with just over 1 teaspoonful of garlic butter mixture and 2–3 rosemary leaves. Sprinkle with salt and pepper.
  8. Bake until the pastry turns golden, about 10–15 minutes.
