Bacon Beer Cheese Dip with White Cheddar

Bacon beer cheese dip is built on a roux of butter and flour, melted with lager, whole milk, and two cheddars, then topped with crispy bacon. Ready in 45 minutes.

Ingredients
  

  • 3 pieces bacon cut into small cubes
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour 15 g; a 1:1 gluten-free flour substitute also works
  • 1 cup lager beer 8 fl oz
  • ½ cup whole milk 4 fl oz
  • 2 cups shredded white cheddar cheese about 8 oz
  • 1 cup shredded sharp yellow cheddar about 4 oz
  • 4 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon freshly chopped chives
  • soft pretzels or soft pretzel bites
  • kielbasa sausage grilled and sliced into ½-inch pieces
  • sturdy corn chips
  • baguette slices

Method
 

  1. Place the cubed bacon in a medium cast-iron pan over medium heat and stir until it turns crispy. Take out and set aside the bacon; throw away the bacon fat.
  2. Using the same pan over medium heat, add the flour and unsalted butter. Whisk together. After the butter has fully melted, keep stirring often for 3 minutes to develop the roux. See chef’s note below about the roux.
  3. Pour in the beer, stir, and allow to simmer for 2 minutes, stirring frequently. Adjust the heat as necessary to keep a simmer. After 2 minutes, pour in the milk and let it simmer for another 2 minutes.
  4. Add the cream cheese and shredded cheeses, turn the heat down to low, and stir. The cheese will melt and blend after 2 minutes.
  5. Stir in the remaining ingredients: Dijon, Worcestershire, and chives, and mix again.
  6. Scatter the reserved bacon on top and serve right away, or move to a fondue or warming pot to keep hot and melted. Dip with fresh pretzels, corn chips, and grilled sausage.
